As you can see I like to keep my toppings as healthy as possible so I opt for Greek yoghurt piled with yummy fresh fruit. What a way to start the weekend!
Last weekend I also wanted to try to make some healthy(ish) snacks as I'm always on the lookout for things to nibble during the day. I got a load of mixed nuts, some oats, whisked up 1 egg white and stired in some cinnamon, then coated the nuts and oats with this mixture and roasted for about half an hour. The result was these amazingly moreish crunchy cinnamon nuts!
After a particularly bad nights sleep and early start on Sunday morning I woke up craving a really sweet (naughty) breakfast! I had just been reading Attic 24 blog where Lucy linked to some gorgeous looking fruit muffins. On Sunday morning these were all I could think of!! So Joshua and I went downstairs early and rustled up a small batch of the most amazing muffins...
I used frozen fruit (blasted for 30 seconds in the microwave), half were blueberry and half were mixed berry fruits.
With a dollop of cream fresh was the *only* way to eat these gorgeously fluffy, tasty little bites of heaven!
I may have just started a new family tradition!
